I guess I found a bug on theme, product label (sale label or percentage) is not showing when you apply default Magento catalog promotion rule (Marketing -> Catalog Price Rule)
You can test it on default Magento 2 (your demo) as well.
If you want to show the sale label, you will need to set a product as sale product in the admin, edit a product then click "Advanced Pricing" and set special price and set time space to show the special price:
