We'd like to add images to page headers, or at least to product category headers - is there a shortcode function for this or a way to add this in the CMS? Or will we need to custom build this? Screenshot highlight for example.

Our theme has a settings for this. You can follow these steps to add background for page title.
1. From Admin - Online Store - Themes - Customizes
2. Theme settings - General - Page title - Add your background
3. Click Save to save the updates and check the front-end.
